A classic in the centre of Santander for almost half a century, under the management of Luis Velasco in the kitchen and Shirley Martínez in the dining room. The meaning of the name becomes clear as soon as you set foot in the ground-floor dining room, decorated in the style of a classic Castilian inn. The menu also betrays its Segovian identity, although with Cantabria still very much ubiquitous. Summer patio.
Zuckling lamb puff pastry pie. Jalapeño shrimps with spinach. Gilt-headed bream baked in salt with fresh tomato and chive vinaigrette. Ibérico pork cheek in aged wine with creamy cauliflower pureé.
